Comfort food and bacon

Good afternoon everyone!

The other day I whipped up a deliciously cheesy baked dish with a dash of bacon on top. I got this recipe off my aunt who got it from a friend of a friend who got it off the internet :p

Here is what you will need :

  • Red skin potatoes ( cut into cubes )
  • 1-2 pounds of chicken breasts (cubed)
  • salt and pepper for seasoning ( probably just a tsp of each )
  • 2 tbsp of garlic powder ( You can also try garlic pepper )
  • Hot sauce ( optional, I love adding a lot of it )
  • 1 -2 tbsp of paprika
  • 1/3 cup of olive oil ( you can always adjust depending on how much you’re making )
  • Bacon ( you can even use bacon bits or crumbled bacon )
  • Shredded blended cheese. ( I like to use sharp cheddar )

Directions:

  • Preheat the oven to 400 F
  • lightly grease  your baking dish pan or spray it with PAM oil
  • In a bowl, mix the garlic powder, paprika, olive oil, hot sauce, salt and pepper . Add the cubed chicken and potatoes in the bowl and make sure they are evenly coated.
  • Add the cubed chicken and potatoes in the baking dish
  • Bake the dish for 60 minutes and stir the food every 15-20 minutes.
  • Once the meal is cooked, add cheese and bacon on top and put it back in the oven for another 3 -5 minutes until the cheese has melted.

Serve with sour cream and hot sauce.
