Good afternoon everyone!
The other day I whipped up a deliciously cheesy baked dish with a dash of bacon on top. I got this recipe off my aunt who got it from a friend of a friend who got it off the internet :p
Here is what you will need :
- Red skin potatoes ( cut into cubes )
- 1-2 pounds of chicken breasts (cubed)
- salt and pepper for seasoning ( probably just a tsp of each )
- 2 tbsp of garlic powder ( You can also try garlic pepper )
- Hot sauce ( optional, I love adding a lot of it )
- 1 -2 tbsp of paprika
- 1/3 cup of olive oil ( you can always adjust depending on how much you’re making )
- Bacon ( you can even use bacon bits or crumbled bacon )
- Shredded blended cheese. ( I like to use sharp cheddar )
Directions:
- Preheat the oven to 400 F
- lightly grease your baking dish pan or spray it with PAM oil
- In a bowl, mix the garlic powder, paprika, olive oil, hot sauce, salt and pepper . Add the cubed chicken and potatoes in the bowl and make sure they are evenly coated.
- Add the cubed chicken and potatoes in the baking dish
- Bake the dish for 60 minutes and stir the food every 15-20 minutes.
- Once the meal is cooked, add cheese and bacon on top and put it back in the oven for another 3 -5 minutes until the cheese has melted.
Serve with sour cream and hot sauce.
